Detailed review of my Yanagiba

I purchased the Yanagiba Sashimi Knife from Kasumi Knives a few weeks ago. The ordering process was straightforward on their website; it was easy to find what I wanted. Shipping took exactly 6 business days from order confirmation to delivery at my doorstep in California. The knife arrived securely packaged in a custom box, protecting the blade. Upon inspection, the craftsmanship is excellent, the blade is perfectly straight, and the edge was incredibly sharp right out of the box, as expected for a sashimi knife. I've used it several times for preparing various fish, and it performs flawlessly, gliding through flesh with minimal effort. I also bought a Ceramic Sharpening Stone with it, which seems to maintain the edge well. The handle is comfortable and offers a good grip. One minor point: while the product description was good, a short video showcasing the unique features of the Yanagiba specifically would be a nice addition for future shoppers. Overall, a highly recommended product and a good shopping experience.

Great value on bundle

Got a good deal on a cleaver

Good knife, slower shipping

I ordered a VG-10 Pro Chef Knife. The knife itself feels really balanced and super sharp, definitely professional-grade as advertised. Shipping took about 8 days to get to my place in Texas, which was a bit longer than I hoped. Customer service answered my email about the delay promptly, which was good. Kasumi and Shun are both really good, often compared. I find my Kasumi holds its edge just as well, maybe even a little better. Shun's good too but Kasumi feels a bit more traditional.

They're both top tier. I've used both professionally. Kasumi might feel a tad more balanced for some people, but it's really down to personal preference. Can't go wrong with either.
